Why Slow Cooking Works So Well
Many lesser-known cuts contain connective tissue.
While this may sound undesirable, it’s actually what creates incredible flavor.
During slow cooking:
Collagen breaks down
Moisture increases
Texture improves
Rich flavors develop
The result is often more satisfying than expensive premium cuts.
